The Preface states the purpose of the book: 'to help the baker increase his sales through greater variety and good quality. It gives only practical formulas for products the American housewife will buy.' Bakers were suggested to send letters with their problems so the staff of the publishing company could attempt to address them in 'the Experimental Bakery'. In the rear of the book a caveat is given that there may be new rules set out by the government.
