What is a Jubilee? It's hard to explain ... nobody knows when or where it will happen, but when the conditions of the brackish waters of Mobile Bay "align," a Jubilee occurs... the combination of low oxygen, currents, darkness, calm waters due to wind direction (or no wind), warm temperatures ... crabs, shrimp and flounder (plus many other creatures from the water) swim towards shore. The lucky ones to witness this phenomenon will most likely be wakened by an observer during the early morning hours before the sun comes up. To gather your harvest from the sea requires a good light source (flounder light, flashlight, head lamp), a gig, receptacle for the critters, a scoop net for crabs or shrimp, and protective footwear. Be careful what you "catch" because you will have a lot of cleaning to do before your seafood is ready for the gumbo pot or freezer.
