"FIVE HUNDRED WAYS TO PREPARE CALIFORNIA SEA FOODS"
Color: Black; Blue; Green; White
"Five Hundred Ways to Prepare California Sea Foods," prepared by the State Fish Exchange of the State Department of Agriculture of California, 1928. The front cover has a blue background with the title in blue and white letters at the top, and the names of the preparators and publisher in blue letters at the bottom left and right, respectively. An image in a shield with brown and orange borders and on a black background is of a fish resting on a bed of lettuce with lemons and olives as garnish. The back cover has an image of a fisherman in a small boat on a wide open sea. The orientation of the printed pages is portrait, although the covers are landscape, and there are two heavy staples holding the interior pages together. After a letter of transmittal concerning the book from the secretary of the exchange to the Department of Agriculture secretary, there is an index listing contents, including fish listed in alphabetical order and means of cooking them, such as creamed, baked, fried, sauteed, canned, broiled, potted, stewed, and so forth. Types of preparation, such as with a New Orleans-style bouillabaisse, or Marsellaise, or as Russian fish cakes, and style of presentation, like with paprika, or as a salad or fish loaf are also given. Other sections concern weights and measures, using cooking wine, a list of fish during the months of their abundance, an essay about the fish industry, and other items are included in the 119-page book. With the cover separated, rubbing and abrasions on edges and corners, creases, soiling, yellowing, some page tears, and small back cover and title page stains, the condition is fair.Lexicon
