A view of the Novitiate from the west. Notice the orchards and vineyards in the background. The winery is in the lower right corner of the photo. A group of visitors is looking uphill toward the Jesuits' vineyard, and some novices appear to be "toiling in the vineyard." This tradition existed almost from the beginnings of the winery. The first vintage was produced in 1888, and in 1889 an order went out stating "hereafter until further orders, the novices will work in the vineyard for one hour before breakfast, instead of reading a history book in it."
