This strain of yeast is used by many of the commercial wineries in the U. S.
Each foil packet contains 5 grams of active dry yeast (Montrachet) packed in a nitrogen atmosphere. Unopened packets will protect the activity . . . . . . . . . . . . . . . . . . . . . . . . . The activity of the balance should last approximately 30 to 60 days under these conditions.
To use the yeast, rehydrate in a few ounces of water at 105 to 115°F (warm but not hot) for about 5 minutes. . . . . . . . . . . . . Use more yeast to speed up the fermentation rate if desired.
Sulphiring requirements are reduced since the rapid fermentation (fast cell build up and activity) and early production of alcohol tends to inhibit contamination. This strain . . . . . . . . . . . . and will ferment rapidly at levels up to 100 ppm of SO2.Lexicon
