A double-sided handwritten letter in black ink, from C. S. Ough, University of California,Davis to the McDonalds, dated 8 Jan 86. It is on University of California letterhead, Department of Viticulture and Enology. College of Agriculture and Environmental Sciences.Context
Dear McDonalds
Sounds like you two are still enjoying life. My activities besides the usual job of chairing the Dept., teaching course in wine analysis and trying to get numerous graduate students through their thesis research has been limited. I did get to Hungary for the 14th Annual Cancer Congress^(Aug 86) to give a paper on ethyl carbonate (urethane) which is becoming a hot item. ^(also visited wineries and vineyards for several days). If you make wine don't add urea as a yeast food - converts partially to ethyl carbonate. I got a certain amount of press on this subject.
I'm looking forward to being relieved from the chair job when we can get the new man hired, Dr. Mullins from Australia, through immigration - a very slow process. Easy if you enter illegally but very difficult legally.
I've been consulting for Pepsico the last couple of years, mainly in grape juice and Slise. Four times a year to N. Y. for this but good money. Another person in our technical board is an M. D. in your age bracket. Jack Filer (Univ. of Iowa Med School). You may know him - nice person - likes wine.
Best regards for the coming year.
(additional note)
Incidentally one of our outstanding graduate student Dr. Hildegard Heymann has taken a job with the Univ. of Missouri FS Dept. She was raised in Stellenbosch and knows wine and most of the people we met there. She isa real nice young lady - you might like her
