Dear Sirs: It is time again to get some new yeast for the present vintage. This year I will need only three envelopes of the Montrachet and 6 Champagne Dry Wine Yeast. Enclosed is a check for $8.00 if this is not sufficient please bill me. or if it is too much, ('add a few packets of Lager and Ale Beer Yeasts.' this is crossed out and in its place is handwritten 'add some yeast nutrient, and pectic enzyme'.) Sincerely,
