A Xerox copy of a handwritten letter from Wilbur P. McDonald to Jim, dated 27 April 1991. It is on Dr. McDonald's letterhead.Context
Dear Jim,
This may be "Old Hat" to you, but it is news to me. An article on page 10 of the March-April edition of Wine East, with the title "Using a Thin Film Evaporator to Improve the Bottom Line," sounds like it has a lot of promise for manipulation of native grapes to enhance their wines. Seems like it would be of value in smoothing out Norton (Virginia Seedling - Cynthiana) as it has been my experience that my Va. Seedling wine was more palatable if it had been blended.
Also, if you are still passing Dr. Max Lakes' book around - Betty, Patty, Jon & Tom, then take your time as there is a lot to learn in those pages. When you are through with it, I'd like it back.
Maybe the thin film evaporator could put more pheromones back into the wine - WOW!!
Sincerely,Lexicon
