A copy of a letter on onion skin paper from Wilbur P. McDonald, M. D., to Dr. A. D. Webb, Professor of Enology, University of California, Davis, dated October 18,1972. The letters COPY in red ink are down the left hand side of the paper.Context
Dear Dr. Webb:
Thank you for your kindness and consideration in talking to an amateur midwestern enologist, on Monday the 2nd of October. The only way I can learn is to sit at the feet of Professors like you, and I never fail to learn something new.
The week spent in the vineyards and winery was both interesting and pleasing. Ranging from the new Sterling Winery on the north end of Napa Valley, where all the wines are exposed to the best "wood", to the Lockeford Winery where there is very little "wood". Your suggestion of cooking a little oak sawdust with alcohol or brandy and using it as an infusion is intriguing, and I am going to try it. Something has to be done to upgrade my wines.
