Context

Dear Sirs: I am an amateur enologist trying to raise grapes in Northwest Missouri so as to make a decent dry wine. This has never been done in this area, so I have nothing to loose, and all to gain. I have been using Yeastart #2 Packets obtained from Scott Laboratories, Richmond, California, but they have discontinued this item, so I am looking for a new source of yeast supply. As I only grow sufficient grapes of any one variety to make a five gallon varietal batch, my production is very limited, bearing from 15 to 60 gallon per year, depending upon the grapes I can bring into production. I am interested in small packets of dry yeast of the Champagne or Montrachet Strain, which I may use for my 5 gallon batches. Could you give me information on this? Sincerely
