A Xerox copy of a letter from Wilbur P. McDonald, M. D., to Robert J. Malley, Jr., Industry Manager, Novo Laboratories Inc., Wilton, Conn., dated August 29, 1980. It is written on Dr. McDonald's letterhead and is in response to Mr. Malley's August 21, 1980 letter.Context
Dear Mr. Malley:
Thank you for the information on Pectinex amd Ultrazyme. From perusing the fact sheets I believe the Ultrazyme 100 would best suit my purpose. I have been using Irgazyme 100 from Ciba-Geigy Corporation, but now I fine they are out of the enzyme business.
As an amateur Enologist for the past 25 years it has been my hobby to try to grow viniferas and hybrid grapes here in Northwest Missouri amd to make a decent wine from them. My vineyard is only 140 vines, which is all I can personally carefor. Then vines each, fourteen varieties, from which I try to make 5 gallon batches of varietal wines. My wine production rarely exceeds 40 gallons a year.
This year I am pressing without Irgazyme as the harvest started August the 18th and I miss it. Irgazyme has helped in the crushing of my white grapes and I am interested in continuing to use a pectic enzyme. Do you have Ultrazyme in small containers? 5 or 10 grams maybe? A 50 gram container far exceeds my needs.
Sincerely,Lexicon
