Description

Canvasback ducks are traditionally considered one of the best-tasting varieties of game. They were extensively harvested by market hunters prior to federal regulations passed at the beginning of the 1900s. In the late 1800s, a pair of Canvasbacks cooked to order would have cost more than $100 in today's money.
