These small jars with lids that screw onto a tall base and are used to coddle eggs. Similar to poaching, a coddle egg is cooked in boiling water. However, these eggs are cooked in a covered vessel of some sort to steam it. The result is a soft, tender egg. Tara Holland of the Kitchn notes that a benefit of coddled eggs over soft boiled eggs is the ability to add seasoning or even bacon or cheese.
Coddlers can be simple, such as the ceramic ones here, or they can be quite decorative. The coddler serves both as the cooking and the serving vessel.Cataloged By
