Spritz cookies originated from Germany and Scandinavia and were brought to the United States with immigrants. The ingredients for the cookies vary, but they are all shaped using a tool that extrudes the dough.
The tool that most commonly shapes the dough in the United States, at least, is the cookie press. To use them, the baker puts the dough in a metal or plastic tube which has a place for a plate on one end and a means of pushing the dough through the tube on the other.
