Preparation page for Herter's Inc. Rod Book page 184 and Cookbook II page 8; black and white photo of Christian (Chris) Dupont Herter holding open a grill. Caption: "If you have an outdoor barbecue with a cover, smoking fish, fowl, venison, squirrel, rabbit, turkey, chicken, beef or pork is easy. Simply put green branches from trimming fruit trees, willows, hickory, or mesquite over a few red hot coals. Place the items to be smoked on the grate, or on a piece of aluminum foil over the grate. Put a few holes in the foil if you use foil. Two or three hours will usually smoke them well."
