Context

Pressing food is a method of preservation. Cooked meats and other ingredients are forced down into a loaf and sealed under a layer of gelatinous stock to exclude bacteria. The stock may be the protein-rich cooking liquid from the meat alone or nowadays boosted by commercial gelatine. Cooked pork and chicken meat covered in jelly is known as brawn, although many different meats can be used.
