Butter hands or 'scotch hands' corrugated wood paddles usually purchased or hand made in pairs. Kitchen Collectibles by Linda Franklin: To use butter hands-Let stand in boiling water for 5 min. Next put in cold water for 5 min. or longer. Must be cold when used. Have large bowl half full of cold water. Cut some firm butter into pieces about the size of a hickory nut. Roll these pieces between the butterhands into any shape you please-grooved balls, little pineapples, scrolls, etc. Dip the hands frequently in ice water.
