William A. Lawrence & Son, Neufchatel and Cream Cheese Factory
Chester was the original home of cream cheese and William A. Lawrence was in the creamery business when he entered the cream cheese business in 1872. Early production amounted to only a few pounds a day. Eventually,, Mr. Lawrence employed 20 men and received 300 cans of milk from 50 farmers each day. In 1895, cream cheese production a amounted 600,000 pounds in Chester. It was a favorite cheese in Cuba and was shipped there during the Spanish-American War. A shortage of milk in Chester prompted Mr. Lawrence to move his business to Antwerp, N. Y. in 1925. Although his home can still be seen on Route 17M, the factory no longer exists.
