Grimsby High School opened in 1925 and closed in 2022 for a short period of time before being repurposed for Central French Immersion Public School, which could no longer fit in its old building. The Grimsby High School was built by Yates Construction Company of Toronto for $84,000 - which was the lowest bid. It took six months to build and when it opened on November 2, 1925 - it welcomed 200 students from Grimsby and Saltfleet. The original building included an auditorium with 450 seats, a basement gymnasium, a well- equipped laboratory, two commercial rooms, an art room and five classrooms. The school offered Tea Dances on Friday afternoons from 4:00-6:00 to teach students acceptable social behaviour and etiquette.
